Sweet and Savory Baked Chicken

- 2-3 pounds chicken pieces
- 2 tablespoons olive oil
- pepper to taste
- 1 onion, sliced
- 8 garlic cloves, peeled
- 2 bay leaves
- 2 cups red wine
- 6-8 fresh figs or 2-3 fresh pears
- juice from 1 lemon
Preheat oven to 350 degrees.
Rub chicken with olive oil and pepper.
Put onion slices, bay leaves, and garlic in a shallow roasting pan.
Place figs and chicken pieces on top of onions and garlic. Pour wine over entire mixture and cover.
- Bake 50-60 minutes, until chicken registers 165 degrees, or until juices run clear from the thigh.
- To serve, remove bay leaves and arrange chicken and fruit on a platter and drizzle with lemon juice.
