Roasted Paprika-Laced Cauliflower

Based on 6-8 servings per recipe.
- 1 head (about 1/2 cup per person) cauliflower, cut into florets
- 1/4 cup extra virgin olive oil
- 1/2-1 teaspoon paprika
- pepper to taste
- juice of 1/2 lemon
- Preheat oven to 400 degrees.
Toss cauliflower in olive oil, paprika, pepper, and lemon juice to coat.
Place in shallow roasting pan and cook in oven until cauliflower starts to brown and knife can easily pierce a floret (20-25 minutes).
Stir once during cooking to ensure that everything is coated with oil.
