Pesto via Yakima Fruit Market’s Recipe

Ingredients

Based on 8 servings per recipe.

  • 2 garlic cloves, (pan roasted)
  • 1/4 cup pine nuts (or other nuts)
  • 3/4 cup olive oil
  • 1 1/2 cups fresh basil leaves
  • 3/4 cup parmesan cheese

Preparation

  1. Combine garlic and nuts in a blender or food processor until well-blended.
  2. Add 3/4 cup olive oil and process until mixture is a thick paste.
  3. Add 1 1/2 cups fresh basil leaves, process until well blended.
  4. Fold in parmesan cheese before serving.
