Fruit Bars

Ingredients

Based on 24 servings per recipe.

  • 2 cups flour
  • 1/2 cup sugar
  • 1 teaspoon baking powder
  • 1/2 cup vegetable oil
  • 1 egg
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 cup jam (strawberry, grape, raspberry, blackberry)

Preparation

  1. Preheat oven to 400 degrees.
  2. Mix flour, sugar, and baking powder.
  3. Stir oil until crumbly.
  4. Add egg, water, vanilla extract and mix well.
  5. Press 2/3 of batter in a 9×9 or 8×8 inch greased pan.
  6. Spread evenly with jam.
  7. Use remaining batter to make crumbs on top.
  8. Bake for 25-30 mins.
  9. Cool in pan and cut into 24 bars.
