Turkey Broth

Ingredients

Based on 6 servings per recipe.

  • 1 small turkey or turkey breast carcass
  • 16 cups water
  • 2 stalks celery
  • 2 carrots
  • 2 onion, quartered
  • 2 bay leaves
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon dried or 4 stems fresh fresh thyme

Preparation

  1. Combine all ingredients in a large pot.
  2. Bring to a boil, then reduce heat to medium-low and simmer for 2 hours.
  3. Skim foam from top of stock.
  4. Strain vegetables, bones and meat from broth.
