Sweet Potato Fries

- 2 sweet potatoes
- small amount non-stick cooking spray or salad oil
- Preheat oven to 500 degrees.
Peel and slice sweet potatoes into 1/8″ thick slices (soak to lower the potassium).
Spray cookie sheet with non-stick cooking spray or wipe with salad oil.
- Place on a baking sheet, bake for 15 minutes.
