Rhubarb Pie

Based on 8 servings per recipe.

  • 1 recipe Pie crust (double crust)
  • 4 cups Rhubarb stalks (unpeeled & diced)
  • 1/4 cup Flour
  • 1 1/4 - 2 cups Sugar
  • 1 tablespoon Butter
  • 1 teaspoon Grated orange rind


  1. Preheat oven to 450F.
  2. Line a pie pan with any pie crust recipe you like.
  3. Mix flour with sugar until very smooth and then blend gently with diced rhubarb.
  4. Let the mixture stand for 15 minutes before putting it into the pie shell.
  5. Sprinkle the fruit with orange rind and dot with butter.
  6. Cover with top or lattice crust.
  7. Bake at 450F for 10 minutes, then reduce the heat to 350F and bake about 40 to 45 minutes.
