Rhubarb Pie

Based on 8 servings per recipe.

  • 1 recipe pie crust, double crust
  • 1/4 cup flour
  • 1 1/4 - 2 cups sugar
  • 4 cups rhubarb stalks, unpeeled & diced
  • 1 teaspoon grated orange rind
  • 1 tablespoon butter


  1. Preheat oven to 450 degrees.
  2. Line a pie pan with any pie crust recipe you like.
  3. Mix flour with sugar until very smooth and then blend gently with diced rhubarb.
  4. Let the mixture stand for 15 minutes before putting it into the pie shell.
  5. Sprinkle the fruit with orange rind and dot with butter.
  6. Cover with top or lattice crust.
  7. Bake for 10 minutes, then reduce heat to 350 degrees and bake about 40 to 45 minutes.
