Based on 6 servings per recipe.
- 1 Small turkey or turkey breast carcass
- 16 cups Water
- 2 stalks Celery
- 2 Carrots
- 2 Onion, quartered
- 2 Bay leaves
- 1/2 teaspoon Ground black pepper
- 1/2 teaspoon dried/4 stems fresh Dried or fresh thyme
Combine all ingredients in a large pot.
Bring to a boil, then reduce heat to medium-low and simmer for 2 hours.
Skim foam from top of stock.
Strain vegetables, bones and meat from broth.
