Based on 6 servings per recipe.
- 1 small turkey or turkey breast carcass
- 16 cups water
- 2 stalks celery
- 2 carrots
- 2 onion, quartered
- 2 bay leaves
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon dried or 4 stems fresh fresh thyme
Combine all ingredients in a large pot.
Bring to a boil, then reduce heat to medium-low and simmer for 2 hours.
Skim foam from top of stock.
Strain vegetables, bones and meat from broth.
