Roasted Garlic Parsnips

Based on 6 servings per recipe.

  • 3-4 large parsnips, sliced into 1/4 inch chunks
  • 8 garlic cloves, peeled and sliced
  • 1/2 large onion, sliced
  • 1 tablespoon fresh or 1 teaspoon dry thyme
  • 3 tablespoons olive oil

Preparation

  1. Heat oven to 350 degrees.
  2. Put parsnips in casserole or baking dish, add 1/4 cup water and cover with lid or foil.
  3. Bake 20-25 minutes.
  4. Meanwhile, saute onion, garlic, olive oil, and thyme.
  5. Add to casserole and bake 20-30 minutes, til tender.
