Red Chili Mustard Vinegar

Based on 8 (2 tablespoons each) servings per recipe.
- 2 tablespoons dijon mustard
- 1 tablespoon shallots, chopped
- to taste pepper
- 1 tablespoon chili powder
- 1/4 cup red wine vinegar
- 1/2 cup olive oil
Whisk together mustard, shallots, pepper, chili powder, and vinegar.
Slowly whisk in oil until emulsified.
Taste and add additional chili powder or pepper to taste.
