Pumpkin Spiced Applesauce Bread or Muffins

Ingredients

Based on 12 servings per recipe.

  • 1 1/2 cups unsweetened applesauce
  • 1 cup brown sugar
  • 1/2 cup vegetable oil
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 teaspoons pumpkin pie spice

Preparation

  1. Preheat oven to 350 degrees.
  2. Grease loaf or muffin pan.
  3. In a medium bowl, whisk applesauce, brown sugar, oil, and eggs together.
  4. In a seperate medium bowl, mix remaining ingredients.
  5. Add applesauce mixture to flour mixture and stir until just combined (careful not to over mix).
  6. Place batter in loaf or muffin pan.
  7. If baking a loaf, bake for about 50-60 minutes.
  8. If baking muffins, bake for about 20 minutes.
  9. You can test doneness by poking with a toothpick, which should come out clean.
