Roasted Beets with Orange Zest

Ingredients

Based on 4-6 servings per recipe.

  • 1 bunch red beets
  • 1 teaspoon red wine vinegar
  • 1 teaspoon olive oil
  • 1/2 teaspoon orange zest

Preparation

  1. Preheat oven to 400 degrees.
  2. Remove the beet tops, leaving about 1/2″ of stem.
  3. Wash beets thoroughly.
  4. Wrap beets loosely in foil and place them on a baking sheet.
  5. Roast beets until tender, about 30- 40 minutes depending on size.
  6. Allow them to cool.
  7. Peel beets and cut off their tops and bottom tails.
  8. Cut them in halves or quarters depending on their size.
  9. Toss with vinegar to taste.
  10. Place beets in refrigerator and allow marinading for an hour.
  11. Before serving, toss the beets with olive oil and orange zest.
