Roasted Paprika-Laced Cauliflower

Ingredients

Based on 6-8 servings per recipe.

  • 1 head (about 1/2 cup per person) cauliflower, cut into florets
  • 1/4 cup extra virgin olive oil
  • 1/2-1 teaspoon paprika
  • to taste pepper
  • 1/2 lemon, juiced

Preparation

  1. Preheat oven to 400 degrees.
  2. Toss cauliflower to coat olive oil, paprika, pepper, and lemon juice.
  3. Place in shallow roasting pan and cook in oven until cauliflower starts to brown and knife can easily pierce a floret. (20-25 minutes)
  4. Stir once during cooking to ensure that everything is coated with oil.
  5. Serve warm.
