Stewed Rhubarb with Grapefruit Juice

Vegetarian, Low Phosphorus, Low Sodium


Based on 6 servings per recipe.

  • 2 pounds Fresh rhubarb (sliced 1 inch thick)
  • 1/4 cup Grapefruit juice
  • 1 1/2 cups Sugar


  1. Combine rhubarb in a saucepan with the grapefruit juice and sugar.
  2. Boil for 2 to 5 minutes or just until tender.
  3. Do not overcook or it will become mushy.
  4. Let cool, then chill thoroughly.
