Roasted Chicken with Figs
Dinner, Holidays, High Potassium, High Protein, Low Sodium
Based on 6 servings per recipe.
- 1 whole chicken, cut or keep whole
- pepper to taste
- 1 onion, sliced
- 8 garlic cloves, peeled
- 2 bay leaves
- 8-10 fresh figs
- 2 cups dry red wine
- juice from 1 lemon
- 1/2 cup fresh mint or parsley, chopped
Preheat oven to 350 degrees.
Rub chicken with olive oil, and pepper.
Place in a shallow roasting pan.
Place the onion on top of the chicken.
Scatter the garlic cloves and bay leaves around the pan.
Place the figs in between the chicken pieces or around the entire chicken.
Pour wine over entire mixture and cover.
Bake 50-60 minutes for chicken pieces, longer if using a whole chicken. The juices will run clear form the thigh when the chicken is done.
To serve, arrange chicken on a platter, and drizzle with lemon juice, fresh mint or parsley.
