Based on 8 servings per recipe.
- 1 cup leftover rice or cooked instant
- 8 bell peppers
- 1 pound ground beef
- 1 medium onion, finely chopped
- 1 can tomato paste
- 1 tablespoon fresh or 1 teaspoon dry oregano fresh or dried
- 1 tablespoon fresh or 1 teaspoon dry parsley
Heat ovento 350 degrees.
Cut off tops of peppers and scoop out seeds and pith.
Mix beef, onion, rice, tomato paste, and herbs together.
Fill peppers and put tops back on.
Pour 1/2 cup water in bottom of casserole dish and add the peppers.
Bake about 1 hour.
