Secret Lemon Cookies

Ingredients

Based on 12 (2 cookies) servings per recipe.

  • 1 box lemon cake mix, no pudding included
  • 2 cups Cool Whip, non dairy topping
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar

Preparation

  1. Preheat oven to 350 degrees.
  2. Grease cookie sheet.
  3. In a large bowl combine cake mix, Cool Whip, egg, and vanilla.
  4. Chill for 1 hour or overnight.
  5. Drop 1 tablespoon of dough into bowl of powdered sugar and coat, slightly pressed. (it is not necessary to make doughs into balls)
  6. Drop powdered sugar dough onto greased cookie sheet.
  7. Bake for 10 minutes.
  8. Let cookies cool for 2 minutes before removing them from the cookie sheet.
