Savory Green Beans

Ingredients

  • 1/2 cup onions, finely chopped
  • 1 garlic clove, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup roma tomatoes, chopped
  • 1/2 pound green beans, cut into 2-inch lengths
  • 1/4 cup water
  • Pinch sugar

Preparation

  1. Combine the onions, garlic, and olive oil in a sauce pan and set over medium-low heat.
  2. Cook, stirring until the onions are soft.
  3. When soft, stir in the tomatoes and green beans and mix well.
  4. Cover and cook about 10 minutes.
  5. Add water to the pan, along with the pinch of sugar.
  6. Cover and cook over low heat until the beans are very tender about 20 minutes.
