Roasted Green Beans and Sweet Onion

Ingredients

Based on 8 servings per recipe.

  • 1 pound sweet onions, cut into 1/2 pieces
  • 2 tablespoons olive oil
  • 2/3 pound green beans
  • 2 tablespoons balsamic vinegar

Preparation

  1. Preheat oven to 375 degrees.
  2. Place onions in a large roasting pan.
  3. Drizzle onions with olive oil and toss to coat evenly.
  4. Place in oven and roast for 30 minutes, turning about every 10 minutes.
  5. Add green beans to the onions and roast for another 10 minutes.
  6. Add balsamic vinegar and cook in oven for another 2 to 5 minutes.
