time enhances food flavors. Choose those tips you will try:
- Add spices within the last hour of cooking for soups or stews.
- For a strong garlic flavor, fresh garlic can be added as late as fifteen minutes before
serving. Rather than chopping, try crushing it with the side of wide knife for a fuller
flavor.
- Brush steaks and chops with oil and season with spices one hour before cooking.
- Yogurt and fresh chopped onions make a wonderful marinade for beef or lamb when broiling
or barbecuing.
- Hamburgers, meatloaves, and stuffings are also best if seasoned before cooking.
- Chop fresh herbs finely to release oils, but don't put them in the blender or they will
be watery.
- Roasts should be sprinkled with herbs towards the end of the roasting time.
- Rub dry herbs between your fingers or on the palm of your hand to release oils.
- Vegetables are best if the seasonings are cooked with them. This is also true for sauces
and gravies with short cooking times.
- Dry herbs can be added 10-15 minutes earlier in sauces or gravies to moisten them.
