Preserving and Enhancing Flavors

Preserving food flavors is helpful in making tasty meals without adding salt. Here are some helpful hints. Choose those that you will try.

  • Cook meats, poultry, and fish at low temperatures to preserve their juices (300E  F.)
  • Steam low-potassium vegetables rather than boiling them.
  • Cook potatoes in their skins rather than without them.
  • Enhance the flavors of your meats with marinades (table wine, vinegar, or lemon juice with oil and spices).
  • Use fresh herbs and spices when possible. Buy them in small amounts at a time so they will stay fresher.
  • Place lemon or lime juice, and rice or wine vinegar on the table instead of a salt shaker. They enhance the flavor of soup, vegetables, and meats.
