An Example of Lowering Salt

Using the tips you have learned, you can change your own recipes. Two recipes are listed below. The first is a recipe with a normal amount of salt. The second is the low-sodium version of the same recipe. Notice how the seasonings are increased. Salt has been reduced, and while sugar and lemon juice have been added. Bold face ingredients have been changed.

 

Tomato Sauce - High Sodium
In a frying pan, over medium heat, stir until tender:

2 tsp vegetable oil
1/2 cup chopped onions
1/2 cup chopped green peppers
1 large shredded corn
1 small chopped zucchini
Add:
1 15 oz can tomato sauce
1 6 oz can tomato paste
1 1/2 cups water
1 tsp. coriander

1 tsp oregano
1/2 tsp garlic powder
1/4 tsp basid
2 tsp salt

Simmer over low heat until done, about 40 minutes.

Tomato Sauce - Low Sodium
In a frying pan, over medium heat, stir until tender:

2 tsp vegetable oil
1/2 cup chopped onions
1/2 cup chopped green peppers
1 large shredded carrot
1 small chopped zucchini
Add:
1 15 oz can no-salt tomato sauce
1 6 oz can no-salt tomato paste
1 1/2 cup water
2 tsp lemon juice
2 tsp coriander (increased)

2 tsp oregano (increased)
2 1/2 tsp garlic (fresh if available) (increased)
1/2 tsp basil (increased)
1/8 tsp salt (decreased)
2 Tbsp sugar

Simmer over low heat until done, about 40 minutes.
