Sample Menu

A sample menu is given on the next pages. It can be removed and taken with you to any restaurant. It suggests food choices that would be best for you.

Study the sample menu. Do the foods that you listed earlier match those on the menu?

If they do, go back and check them off. If not, try choosing a substitute.

Breakfast

Fruits and Juices

Cranberry, apple and grape juices
Grapefruit
Choice of canned fruits

Cereals
Hot and cold cereals
(order with cream or
half-and-half)

Pancakes and the Like
Pancakes (limit to 2 large)
French toast
Waffle
Crepes

Eggs and Such

Poached, soft, cooked, scrambled
or fried
Omelet (with fillings like onion,
green pepper, hamburger)

Side Orders
Beef patty or breakfast steak
Toast or muffin
Sweet roll or doughnut
Cinnamon roll
Croissant

Lunch and Dinner

Appetizers

Fresh vegetable tray
Cheese tray
Potato skins (with low-salt toppings like sour cream and chives)
Roll or bread sticks
Unsalted crackers
Steamed or baked seafood (without sauces)
Tossed green salad (dressings on the side)

 

Salad Entrees

Ask for salad dressing on the side, so you can limit how much you use.

 

Cottage cheese, and fruit
Chicken, turkey, or tuna salad
Chef's salad (hold the ham)
Shrimp or crab louis (hold the pickle and olive)
Taco salad (hold the guacamole)

 

Sandwiches

Roast beef, chicken, turkey, cheese, tuna, egg salad, or bagel and cream cheese.
Hamburgers (hold the special sauce, pickles, and cheese but small amounts
of mustard and ketchup are fine.)
Taco, tostada or burrito

Pizza

Limit 2 slices.
Choose low salt toppings like green pepper, onion, pineapple,
ground beef, mushrooms, or tomatoes.

Order the following entrees without salt, gravy, or sauces.

Meat Entrees

Roasted or broiled cuts of beef, lamb, or pork

Poultry Entrees

Baked or broiled chicken, turkey, or game hens
(remove seasoned bread coatings and limit stuffings.)

Seafood Entrees

Baked, broiled, sauteed, or steamed without salt.
(Crab, shrimp, oysters, sole, salmon, or trout are good choices. If fried,
try to limit the amount of breading you eat.)
Order lemon or vinegar to enhance the flavor.

Avoid: Dishes with gravies and salty sauces like barbecue sauce, cheese
sauce, tartar sauce, tomato sauce, or white sauce.

Extras

Rice, noodles, rolls, or tortillas with butter
If potatoes are desired, whipped are lowest in potassium, then boiled,
fried, hashbrowned, and baked.

Desserts

Cakes
Cheese cake
Chocolates
Cookies
Custard
Dessert liquors

Hard candy
Ice cream and sundaes
Jello
Mints
Pudding
Sherbet

Beverages

Most are acceptable if kept within your fluid allowance.
Here are a few considerations to keep in mind.
Coffee, tea, espresso, or decaf - these are fine.
Milk, milkshakes, and cocoa - these are higher in sodium, potassium,
and phosphorus than other beverages.
Fruit juices - some are high in potassium.
Carbonated beverages - both regular and diet are fine.
Alcoholic beverages - drinking "on the rocks" or "straight" will limit
your fluid intake.

Avoid: Vegetable juices, large servings sizes, "bottomless cups of coffee."
